Whole caraway

Use in cheesemaking

Caraway plays a special role in cheesemaking. Whole seeds are added to smoked and skimmed-milk cheeses in Austria, Germany, Hungary, the Netherlands and Scandinavia. Traditional medieval recipes for caraway cheeses are still made today, such as the well-known Dutch Leyden (Leidse kaas). Caraway adds a distinctive spicy flavour and aroma that beautifully highlight the character of cheese.

Other uses

Beyond cheese, caraway is widely used in cabbage, mushroom, pea and potato soups, meat dishes and bread.
