Description
Square mould for Taleggio and other rennet-set and acid-set cheeses. Choose the mould size and add the separate components suited to your shaping method.
Two mould sizes with a 19 × 19 cm base make cheeses of different heights. Extensions and inserts assist from filling and draining to turning the cheese. Each component is a separate option, rather than part of a single complete set.
Small: height 7 cm, approximately 1.5 kg; large: height 15 cm, approximately 2.2 kg. The extension adds 5 cm and fits both sizes and further extensions. The 7 cm divider creates four equal sections: one fits the small mould, two the large. The patterned insert can go at the bottom and top, helping turn the assembly without removing the cheese and supporting even pressing and drainage. Inserts are sold individually. Add each chosen component to the basket separately.
