A lever whose action you can calculate

The arm lowers as the cheese volume decreases while whey drains. The lever design lets you estimate the load on the mould: multiply the suspended weight by this model’s multiplier. Match pressing to the cheese and the stage of the process — a heavier load does not always mean a better result.

An additional stabilising base helps support the construction under larger loads.

Choose the wood and plan your workspace

Material variants let you choose a construction to suit your preferences. Pine makes a lighter press; beech and ash are hard, heavier woods with lower absorbency. The variants for this model are listed below. Before choosing, compare the base dimensions and height with the space where you will work.

The wood is treated with specialist linseed oil intended for wooden elements in contact with food. The treatment helps limit soiling and makes whey runoff and cleaning easier.
